Unlike the Pro 500, even though it says it can make hot soup, the E310 creates a more consistent blending speed for challenging ingredients.
The Vitamix Pro 500, on the other hand, is good for a few things. It can whip up smoothies, desserts, creams, sauces, and basically everything but hot soup. It even has smaller blades in comparison to its large 64-ounce carafe jar.

The E310 runs on a 2.0 HP motor which is powerful, quiet, and efficient. Considering its small 48-ounce container size, it produces plenty of power to run consistently without overheating or overloading. And you can run it for a longer time, in a single sitting, without much trouble.
But the Vitamix Pro 500, which uses a larger 64-ounce container, uses the same high peak motor (2.0) for its blending. According to industry standards, it’s limited in its blending performance. Especially when you compare it to other blenders that use 2.2 HP motor with 64-ounces of blending capacity.
Blending soft and hard ingredients is tougher and faster in the E310 than the Pro 500. Due to the larger Pro 500’s blending capacity, it may also produce more noise at higher speeds.

There is no drawback in either one of these blenders when you talk about their jar size. The difference is in their sizes – 48 ounce and 64 ounces respectively. And this primarily depends on what you’re looking for as a home cook.
A variety of factors weigh in here. For example, how many cups of ingredients do you need to blend every day? If it’s a smaller quantity, the 48-ounce blender of the E310 will work. It’s compact and lightweight with a high-powered motor.
For a larger serving, however, that is more than 2 cups or 2 cups minimum, the 64-ounce blender of the Pro 500 is ideal. The blade size of the Pro 500 is 3-inch too. Why is this such a letdown in comparison to the 3-inch blades of E310? The Pro 500 features a 64-ounce container. The standard for a 64-ounce container is 4-inch blades. So in comparison to that, 3-inch blades are smaller.
This makes it trickier to use when blending harder ingredients. The Pro 500 is fairly decent when it comes to blending all types of ingredients. But the smaller blade size in a large 64-ounce container does leave some gaps in blending consistency.
Moreover, the E310 creates fast-acting friction when blending at a higher speed. This increases the temperature of the food inside, which is perfect for blending soups.
The Pro 500 series, despite its manufacturer details that it can blend soup, do not create blade friction for hot soup. So that’s one feature that the Pro 500 series does not offer despite the fact that it shares the same 10 variable speeds as the E310.

You can select from smoothies, frozen desserts, and hot soup. But the soup mode is not very effective because it does not create enough friction to heat up. And the other two modes – smoothies and frozen desserts – work just as well in the E310. So it’s not like the Pro 500 is contributing something new. What’s changed is just the names of the blending modes, nothing else.
This allows you a bit more control over the blender. It takes away the second-guessing for how fast or slow you want the blender to work in case you want to quickly whip up a smoothie or make ice cream.
But considering that with the Vitamix E310 you can make hot soup in minutes gives it an advantage over the Pro 500, even though it comes with a Hot Soup setting.

Another minor inconvenience on behalf of the E310 is that it has a shorter cord length – 4.5 feet – than the Pro 500 – 6 feet. But for a small countertop, this should not be a problem.
